This is a family favorite for everyone except my vegetarian daughter!! I do make her a version with white beans but to be honest it REALLY needs bacon!! I have been making this recipe forever & have adapted it through the years to fit into our life style. It is high in healthy fats & protein. If you are sensitive to dairy, this one is NOT for you. I generally double or even triple it & put multiple single servings in the freezer along with a full cake pan for surprise dinner guest or quick meals. It holds up AMAZING in the freezer. Just pop it in a moderate oven to reheat. Let me know how you modify it for your peeps!!
