I love pizza and MISSED it when we were trying to go no car or carnivore or any other diet we tried in the past. I can tell you that we eat pizza every
single month and have continued to loose weight. The things we switched was the TYPE of flour we use in our crust.
Traditional white or wheat flour is full of excessive gluten & enriched with synthetic vitamins that my gut could not handle. It caused bloating and CRAVINGS that made me eat much larger portions. I'm not even diving into the GMO issue with traditional white or wheat flour. JUST NO.

Einkorn is higher in protein, vitamins, and minerals than modern wheat, which has been genetically modified and stripped of nutrients to make white flour. Einkorn is also rich in fiber, carbohydrates, zinc, iron, folate, and vitamin B6.
Einkorn has fewer chromosomes than modern wheat, which alters its gluten structure and makes it easier to digest. The gluten in einkorn also lacks proteins that can trigger gluten sensitivities.
Einkorn is four times higher in beta-carotene (vitamin A) than regular wheat, and also contains the antioxidants lutein and zeaxanthin, which can help prevent cataracts and macular degeneration.

When I started making my own pizza dough with Einkorn wheat I played with lots of recipes until I found a fast quick recipe that satisfied my desire for a YUMMY crust AND was ready quickly!!
This is a minor twist on the 2-ingredient dough. I use that recipe for lots of things and it works perfect for my pizza dough. I typically make enough for two meals and keep the extra dough covered in the fridge for up to 4 days. I have frozen it before and it still turned out great! VERY easy dough to work with. Just defrost the dough in the fridge the morning you are going to use it so it is pliable by dinner.
Quick Einkorn Pizza Dough
Ingredients:
1 cup Einkorn flour
2 teaspoons baking powder
¾ teaspoon sea salt
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1 cup Greek Yogurt
Top:
2 teaspoons shredded Parmesan (grab the real stuff)
1 1/2 teaspoons olive oil
Directions:
Mix dry ingredients together
Add yogurt
Mix until well combined
Refrigerate for 10 minutes
Flatten & roll thin
Brush w/ olive oil & sprinkle with parmesan cheese
Parbake crust at 425° for 5 to 7 minutes.
Remove from the oven, add sauce and toppings.
Return to the oven and bake until crust is lightly browned.

Add a toothpick swirl of your vitality oils to the olive oil before you parbake the crust!!! Elevates the flavor so much!!! You can do the same thing to the yogurt before you add it to the Einkorn flour. So good!!!
